They experimented EVERYTHING and taste-tested all instant coffee that they could find on the market. They have interviewed hundreds of coffee drinkers and partnered with a group of baristas as well as experts in the food-processing industry to create Barinsta (Barista + Instant) premium instant coffee. After years of hard work, they are finally ready to launch the products. Their ultimate dream is to be stocked at all Wegmans in the region. Barinsta included the highest quality ingredients, it all starts with the coffee bean. All of its coffee beans were grown in the volcanic soil/ central of Vietnam (Dak-lak) which is ideal for growing coffee beans. Only ripe coffee cherries were hand-selected for processing. Barinsta’s instant coffee is freeze-dried to retain maximum flavor and preserve more of the aroma compounds. Understanding the distinctive characteristics of each bean type, our team of baristas created more than 100 iterations with different ratios of Arabica and Robusta combinations and picked the blend that is perfectly well-balanced between the properties of the two earthy, a savory, and deep notes.
In order to retain all the desired characteristics of freshly brewed coffee in an instant form, the operating conditions such as freezing rate, shelf-temperature level, gas pressure, and moisture content of the freeze-drying process has to be properly designed. An extensive experimental investigation is carried out to identify the optimal operating conditions that allow for obtaining a product in which the taste, smell, and content of various nutrients do not change.
